Chicken souvlaki

Ok here you go:

I only use chicken tenders. They are quick to cook up, tender to eat and they are all about the same size so they cook in about the same time

3 pounds of tenders — add after the mix it done
2 lemons juice and zest
You need to make or buy a citrus Italian vinaigrette add about 1/2 cup along with about 1 tablespoon of salt
2 tablespoons of oregano
1 teaspoon of black pepper

Shake the stuff up in a large ziplock bag when done, add the chicken. Leave in the marinate for 24 hours before use. The salt is there to brine the chicken with the marinate. Grill until done

Tzatziki sauce
1 small cucumber shred or finely chopped
1 1/2 cups plain yogurt
1/2 cup of sour cream
1 clove garlic, minced
3 tablespoons fresh dill
1 lemon juice and zest
1/2 cup crumbled Greek feta cheese
Salt and pepper to taste

Pita's spray with pam or equivalent on both sides so they can be warmed up on the stove prior to eating.

Then add your fixings: usual lettuce, tomatoes, red onion and a little more feta on top

Btw the garlic should sing but not overpowering if you know what I mean.

The story behind this was every pregnancy we had , my wife would ask for this Greek restaurant for their chicken souvlaki. It was every two weeks for four pregnancies. I finally made it better then them. They were rated the best tasting Greek food for the Seattle/Tacoma area.

Now add roasted lemon and garlic potatoes and a Greek salad and you will be full and satisfied for sure.
