Re: Monterey Chicken
Thanks, Y'all
As many times as I've used that recipe, I have never noticed that absent recipe
I have always substituted Salsa or Pico as a filling or topping to the rolled breasts and never saw or missed it.

Re: Monterey Chicken
Perfectly exocuted parts, we had that about a week ago, it's called chicken Maryland here. I said to the cook ( a misnomer) we must do this again.

So I went Goodling and found that the most common thing about the recipe is the name. For the sauce it varied a lot but most said BBQ sauce of your choice. Interestingly one called for draining Rotel and using that.
Decided to throw out a recipe I found that unlike OUP's is not tested so use @ one's own peril.
Monterey Chicken
this recipe comes straight from Chili's
INGREDIENTS
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons Worcestershire sauce
5 dashes garlic
5 dashes salt
4 boneless skinless chicken breasts
1 cup of shredded monterey jack cheese
8 slices apple-smoked bacon
8 tablespoons barbecue sauce ; of your choice
INSTRUCTIONS
Mix the honey, soy sauce, Worcestershire sauce, garlic and salt to make the marinade.
Put the marinade into a ZipLoc bag large enough for all the chicken breasts to fit. Add water until the marinade reaches the top of the chicken breasts.
Marinate for as close to 8 hours as possible.
To cook:.
Bake, Broil, Grill or Skillet Fry, either way works well. Chili's grills (and I prefer grilled). Choose your preferred method and cook until the breasts are done.
While the breasts are cooking, fry up the bacon until CRISP!
When the chicken is done, top each breast with 2 tbsps of BBQ sauce, two strips of bacon and 1/4 cup of shredded cheese.
Broil until the cheese is melted.

Re: Monterey Chicken
Very different except for the name and I too saw a lot of recipes that recommended BBQ Sauce. My Recipe came from "The Lions Club Cookbook" and I can still remember the Loin Ladies coming door to door selling them in our small town neighborhood. I think I'll stay with the butter and bread crumb coating but thanks for sharing that option.

Looking good. Something we need to to try. I immediately started visualize the Loin ladies from the Lions club. Can't get them out of my head.OldUsedParts wrote:Very different except for the name and I too saw a lot of recipes that recommended BBQ Sauce.
