Those look great
Looks like you left some "heat" in yours also. Did you remove the veins also??
BTW, that works great on Nachos as a lite topping over the cheese and chips before melting in the microwave.
I use Tostitos Bite Size Chips with Monterey Jack Cheese and then the Jalapeno Jelly - - - done in the Microwave for about 15 seconds.
These are Habit Forming

We left some veins and seeds in five of the peppers in the first batch. We backed that down to veins and seeds in two for the second batch.
My wife puts jalapeno jelly on creamed cheese and a cracker. I haven't thought about Nachos, but that's a great idea. We're going to try it this weekend.

That reminds me of what we used to do with Cream Cheese and Crackers AND this Sauce from Fischer-Wieser.

Just place the block of Cream Cheese on a dish and cover with the above Sauce.
Then use Crackers to dip with and Enjoy.

Gonna try that Sure Gel method. How many peppers per jar on average OUP or anyone else?

I use around 12 medium peppers (de-seeded and de-veined) and usually get 7 pints - - - I'm sure you could increase the peppers a little with no problem.

My wife is down in the basement right now making half-pint jars 10-15. Some friends came over to watch the football game last Saturday and loved it. Naturally they left with a jar. My wife said she’s going to make another one last batch after this and give jars away for Christmas.

WOW, that is so good to hear and the Christmas Gift Idea is great also - - - I've given many jars away but mostly to my Kids. I'll bet your Wife is going to do a Christmasie lable for the Jars isn't she ?????
