One of my best longtime Friends is coming for a two day visit so, since he now lives in N.C. I'm fixing some Texas Memory Vittles for us to enjoy.
Mixed up some Butter, Brown Sugah and Salt and used it to cover a pound of Texas Pecans. Then in the oven at 225 for 3 hrs. stirring every 30 minutes. The only bad thing about these is now I have to hide them from the Wiffy so they'll be some when my Bud gets here.

Hmmmm "Smoked PeeCans" eh? sounds interesting - - - - I prefer mine with salt and butter but I was primarily fixing these for ALL to enjoy.

C.P. these were Roasted in the Oven and had no smoke flavor, only a sugary salty taste except for the awesome flavor of roasted Texas Pecans. Low and Slow is the "ONLY" way I roast them and I just mix the coating by taste and feel instead of measuring. Off the top of my head I would say that for a pound I used ?around? a stick of butter, cups of brown sugar and lots of salt. I even sprinkle them with salt every time I stir them (30 min intervals). Let your taster be your recipe.

Happy New Year, Pardnah, as far as appearance they are close once shelled, HOWEVER, they do not taste the same. I, myself, do not like Walnuts but I "Crave" Pecans - - - best part is they are good for you. Let me look aroud for a good sampling of Texas Pecans (I might even roast some) and send them down under for Y'all to sample.
