Smoked Turkey for Thanksgiving

Planning on smoking a few whole turkeys or a few large bone in turkey breasts for Thanksgiving. Want to do a few trial smokes before vacation to the hill country with the family and the pit. Planning on using a brine. Anyone have a great recipe or tips for making some great smoked turkey for Thanksgiving? Thanks 8)

Here is what I did for Thanksgiving last year. The crowd loved it.
Stan

Turkey Cook (2 turkeys) Nov. 12 and 13th 2009

Turkeys weighed 10 and 12 pounds.
Started 2 thawed turkeys brining Nov. 12, 2009 at 12:05 PM. in Ice Chest with 3 gallons of ice in milk jugs.
Brined the turkeys in Reynolds turkey size baking bags.

Turkey Brine Recipe For 2 Turkeys


* 2 gallons water
* 2 cups coarse Kosher salt
* 1 1/2 cups soy sauce
* 1 cup white sugar
* 1 cup brown sugar
* 1 cup honey
1 cup apple cider vinegar
1 teaspoon sage
* 8 tablespoons black pepper
* 8 tablespoons chopped garlic
* 2 teaspoons Allspice
4 Tablespoons Tender Quick (optional)
When rolling boil turned fire off and let it set until it is room temperature then.

brine turkey for 24 hours.

November 13, 2009
Rubbed turkeys with olive oil and BBQ rub.

Started turkeys cooking on smoker and smoked until internal temperature of turkeys was 175 degrees.

Mine are real simple - plenty Hoochie Mama and sugar cane for smoke

Put a tray of veggies under this one

Lately I have been separating the legs/thighs from the breast so I can pull the breast at 165 and thighs at 185

Turkey Breast - I injected this one with maple syrup then vacuum packed overnight - I'll do that again

sweet. I appreciate it yall. and egghead... those pics are legit. I plan on doing the same as you... bone in breasts with other parts separate. those brines are in the area of what i was planning.
