If I'm cooking at 325-250f, what are my rough cooking times per pound? And also anyone want to clue me in on wrapping it or not during the cook..

At 225, a very rough rule of thumb is 75 minutes per pound. You don't have to wrap, but I like to wrap mine after 8 hours or so, when it hits 165. All of this depends on many factors.
