Chili From a Different Angle

About 10 years ago, my wife and I went to Florida to visit the kids. They took us to a chili cook-off.

We sampled this chili that was not too hot, and it packed a good hint of curry with lots of veggies. We loved it, and as luck would have it, they had recipe cards to hand out.

I've been making it every winter since. The recipe includes the kitchen sink, but I'll do it pictures. If you want the recipe, PM me.

I browned the ground beef and pork (5 pounds) and set it aside.

Sweating the veggies:

Once they were sweated, I added all the rest of the ingredients, brought to a boil, and now it's simmering for a few hours. My house smells great! :D

Serving bowls tonight, and doing twice baked spuds tomorrow stuffed with this and cheese. :D It well be even better tomorrow. :D

I'll certainly take a copy of the Recipe, altho I doubt that most of the non-meat/food ingredients will be available here.

Here's the card, complete with some cooking stains. :D

Some changes I've made over time:

-Brown all of the meat first and reserve.

-Stir the tomato paste into the veggies right before they're done with the saute

-Add the stock once all of the other wet ingredients and meat are in. You want just enough stock to cover the mix, or it gets too wet

-I cut the ketchup to 1/2 cup

-You can increase the firepower with jalapeno or habenaros.
