Sausage casings

Postby Copasspupil » Sun Sep 11, 2022 7:10 pm

Is one preferred over others for those whom have done it? I want to get into sausage making.

I prefer natural casings for most links, Colligen for snack sticks and fiber casings for summer sausage type items.
Try a bit of vinegar in the solution when soaking natural casings it helps transparency and flexability.

It's been quite a while since I've done any sausage but back in the day I/WE always preferred Natural Casings as Papa Tom previously mentioned. :wav: :chef:  :salut: :texas:

Rambo I did see that before posting but I was looking for more of a product recommendation. I didn't know if some were better than others. There's certainly a big difference in price from the manufacturers. I hope that makes sense.

For many years I used vinegar in my soak. Of late, I've changed to baking soda. Here is a really good link about casings, https://youtu.be/iEtbNfKwi9o. Not saying you should purchase the products he is pushing, but pay attention to the procedures. I think the vinegar soak was to help with the cleaning which I don't believe is still an issue.
