Rambo. I thought of you today
Going forward to dry age a prime brisket for burgers. 45 days I think. 3.49/lb and will cost me 8.00 for the local butcher to do the grind when I’m done.

Have you considered having some of that ground into coarser ground Chili Meat

LOL; Sherry made some Chili out of my Extra Lean grind Monday night, it was awesome. I put more of the fat into the meat I labeled ' HB" for patties. Enjoy

we always use the extra fat in the patties cooked on the grill, sure does make em taste better

The results are in. The end weight was 12.53 #'s. My butcher took pics of the brisket and felt I should have trimmed it before the dry aging process. By adding the extra fat from the previous two strips I did created a much higher fat content so I need to add a leaner meat in a grind to it then serve as either burgers or chili. Next time I'll try and different approach to it.

I think that T-Dragon is pretty knowledgeable along those line.

Wow!! That thing is FAT!!! I'd definitely add some lean to it. Look to round or sirloin if you wanna mix it up with other cuts without having to resort to finding a prime flat.
