Hi Dats - we do not include curing salts in the ingredients. I decide to make all of the recipes "Fresh Sausage".

Pink salt could be added if you are looking to cure. ;)

I have never used anything other than natural, dont know if it would be of benefit to you or not;
I plan on making some sausage some day soon as I get rid of this pesky thing called a job that keeps taking up my time :dont: :scratch: :D
