Pull it at 135. I know about size, have to resize my photos. Most of the photo software can resize your photos.

I’m going to try this again. I decided to triple smoke the bacon partially due to the heat on day 1 but it was much cooler the later days so I continued. Dropped my salt percentage down from 2.0% to 1.8% to see if the saltiness would be less noticeable which it was on the leftover pieces I cooked up while slicing, bagging and freezing the products. Panchetta was sweet and can’t wait to try it in 6 months. The reviews on the other bacons were met with the misses pleasing expressions. The belly was the leanest belly I’ve had to date and I was super happy. Now I just need to figure out why all my pics are significantly larger than what is allowed

Calabrian inspired Canadian bacon was a huge success. Even my Chief who will not eat hot food loves it. I had twelve pieces I cooked up to try but I only have 1 slice left. I plan on adding a layer of the Calabrian chili pepper powder to the pancetta and reroll/tie it when I get back home after this tour.

A local chef and the mayor found out about it so I’m cooking up the rest of the package.

I was desperately searching for some bread to make a BLT sampler for myself and only found a Hawaiian hot dog bun but it so worked with this Canadian bacon. You were not alone with the thought.
