Pancetta experiment is over

A few months ago (4 months apparently) when I did the round of bacon, I had made some pancetta, smoked it then rolled/stored in the refrigerator to age a little. Today was the day to remove it, cut the ends for some risotto for dinner tonight and see how it turned out. I love sampling the cooked pieces that suddenly popped out of the pot. Subtle smoky flavor. Pretty pleased

The next one will be different. I plan on adding a second layer of flavor during the vacuumed stage. I want a Calabrian chili pancetta with a Grande Marnier added chaser so to speak. We shall see how it goes.
