Jerky anyone

I have been around but lurking. This time of year I really got into dry aging meats due to the cool temperatures. Currently have a capicola, coppo, and 6 lonzinos at various stages of drying. Trying a second layer of flavor to three of them.

Yesterday I was inspired to make jerky so off I went to the store to pick up two loins and they are on the smoker now. After so many hours, they will head to the dehydrator to finish off. The marinate smells great so I hope it finished off well. Here's some pics to keep you waiting...

Me neither until this weekend. The weather has caused me to not be able to cross the passes or travel south to get around them due to the flooding and mudslides. I got to say I love the break from driving and getting back to my smoker. Miss not spending time managing the fire.

Done with the smoke. Adding additional flavor before it heads to the dehydrator

Dun...pork teriyaki jerky gluten free. I have three with ciliac disease. Spicy is on the right.

Thanks my friends. I bought the spice from Amazon for making Sopressata and it is the real deal. Brings the heat and it does taste great. Word of warning, wash you hands after picking it up with your hands

That jerky looks pretty good. I just had some shipped in from South Dakota, but haven’t had a chance to try it yet.

Nice jerky C. I have been guilty of not washing my hands after handling spicy stuff. Don’t rub your eyes or handle anything sensitive. :angryfire: :oops:

That stuff is seriously hot. I touched the outside of the container while moving it from the mailed package it came in to my shelf and burned parts horribly. Consumer responsibility/Note to self parts mean your junk, eyes, ears and nose are ones that are sensitive.
