Thanks Parts. My neighbor must be out of town. I have yet to see him for his special meat recipe. I have time. My daughter is getting married in July.

Meat must be finished is the motto these days. I took two eye of rounds prime and started the process of EQ curing them into beef braeseola and beef capicola. Due to the thickness, I'm going to cure it for 18 days then rinse and additional flavorings and dry to 38%. Trying collagen sheets for these two, net them and tie them up. Adding orange dust to each piece and see how they taste.

Thanks Rambo. I’m in Maryland for this week and Oregon for another set of fire classes. I’m hoping my girls will flip the ziplocks so the cure will take care of the complete thickness of the beef.

I don’t even know what that is but I’ll betcha it tastes good when you get through. I don’t have that much patience and would probably make everyone ill that tried it

It started out as eye of round then making a cure with seasoning for approximately 2 week flipping it over each day to completely curing the entire muscle plus a couple of extra to be sure. Once it is done you wrap it with these collagen sheets to keep it free from air contact. You poke it with needles to remove any air from being trapped under the sheets and hang it in the refrigerator until it reaches 40% weight loss. This should help.

I was here when he was around. He was a good dude. Good people. He has been sorely missed.

The orange dust was a little surprising and the collagen wrap was new to me. I would have taken pics but you really didn't see much. Someone took out my 600 mold penicillin which you used to protect the meat was found out on top of my refrigerator and I had to order some last night. It should be here by Monday to spray down the meat.

Bresaola is completed. Out of all of the dried aged meats I've done to date this year, the orange beef capicola smells incredibly fragrant. Vacuumed sealed after final weighing. Approximately 35-36% weight loss. Very happy with these two. Going to adding a flavored wash then deep 6 it until July and December.
