Lamb bits pastrami
Found these at my local Mercado again and couldn’t resist. Found a recipe today using pastrami brine. Comments said it was good for charcuterie boards. Well we have been invited to a gathering next Sunday. Charcuterie board will be my offering. Don’t know why they mislabel the packs but they do. These are not kidneys.
Down for 4 days followed by a day air drying in the fridge and a couple hours smoke.

Yes mountain oysters. I’ve had them fried, had them smoked. Saw this recipe and figured why not. Thinking the texture will be between bologna and salami, leaning more towards bologna.

I've had Rocky Mtn Oysters and we've fixed Calf Fries after working the Spring Calf Crop HOWEVER they have always been Fried

Seems like they ?could? be a little chewy but that's just a guess ?????????

I killed an Elk in about 1980 in Idaho. The Outfitter , wrangler’s, and cook INSISTED I eat the Nuts. I told’em I wasn’t eating no Nuts; P’sum off terribly

After a 4 day brine here they are. Slight color change, still the same texture. Thought they would have firmed up a little bit but really no difference. Resting now in the fridge on the rack till hitting the smoke sauna tomorrow.
