A.J. Judice's Boudain Recipe

9 lbs. pork (cooked and ground)
2 lbs. pork or calves liver (cooked & ground)

Cook the following vegetables along with the pork
2 stalks celery (chopped fine)
1 bunch green onions (chopped)
1 bell pepper (chopped)
2 large onions (chopped)

Save some of the liquid from the cooked pork to help in the mixing with the rice.
1 oz. salt (put in with meat when cooking)
1 oz. red pepper
1/2 oz. black pepper
1/2 oz. garlic powder
1/2 oz. M.S.G. (Accent)
5 lbs. cooked rice

Mix all ingredients well and stuff into sausage casings.

Thanks HM but have a question. Assume that the 5 lb rice is dry weight?

Yes. This was how it was in the store in Port Arthur.
