Thanks. I'm not quite sure about the beans, though. I'm not so fan of beans.

Cornbread is great. I like the skillet parts sent me since the cornbread looks like a corn. I will work on this to perfect the cornbread.

Another tip, if you have fresh corn available, strip some off the cob and stir it into the batter, or used canned corn well drained. Having actual moist corn kernels inside scattered through the bread gives it an added texture and sweetness. You can also chop the meat of a good pepper like jalapeño or Serano with a fine chop and stir that in for some heat.

By the way, great corn bread is taylormade as a great compliment for a classic Texas bowl of red - Chili! And be advised, there are multiple rabid chiliheads on this forum who can assist with the recipe. Personally, I would spend the money to order Harch red chile pepper from New Mexico which you can buy online, it is typically fresher and has a great flavor, which is why Hatch is pretty legendary for producing chile in the United States.

Thanks for great tips. We have fresh corn here, it's actually grown here during summer. On many farms you can come and pick corn yourself and pay for what you take.

I will absolutely try both fresh corn or chopped jalapeno in the cornbread. Sounds good

Regarding the chili I've used SB competition chili packages which I've found excellent. Whole family love it. Especially compared to what we get served as chili here which I would call a stew of whatever the cook had a available of veggies and other stuff. Pretty tasteless.

Rambo and company are spot on they are F-A-B. Coincidentally, they go wonderfully with cornbread. Easy to make too, would recommend searing up diced bacon or ham and stirring in with the peas along with a good green like mustard greens or collard greens.
