Been Awile
Fixed some Salmon Patties (Mom called them Croquettes), with French Style Green Beans and Mac and Chez today and was reminded that this was the first time since the stay home that I've cooked a dish with sides.
Put some Caramelized Own-Yawns in the Green Beans and it really stepped them up in flavor.

That looks tayst. I like salmon but I'm a bit tired of the whole fish file we usually cook here.
Do you mind sharing the recipe of those salmon patties?

Yep, Mama made those things all the time when I was growing up out of that canned salmon in the pink cans

You Betcha You'll probably need to double this for your Bunch.
One 5oz can of Salmon.
3/4 cup finely Chopped Onion (if you don't chop it pretty fine then it will cause your patties to fall apart)
One Egg (I drain the liquid off of the salmon so the egg is the only liquid I use. You can add salmon juice if needed)
about 8 Saltine Crackers crumbled up fine (you may have to add more once the mix is complete)
favorite Cajun or seafood seasoning according to taste
place favorite fish, shrimp or dry frying mix in a separate dish for dipping patties prior to frying (you can also put seasoning in this if preferred)
Crumble up crackers in a large bowl
Add Salmon, Egg and Onions
Add seasoning and mix well
When thoroughly mixed form into small balls and then into patties
Place patties one at a time turning once into dry mix and then fry in oil until brown
If you see something that doesn't look right or you don't understand just holler, OK?

Those are a favorite round here too.
Wife made those for our young grandson because he'd never had them, he proceeded to eat us out of salmon so she decided to make them out of canned tuna and he ate all of those too.
Today he is a 174 lb wrestler for OSU.

One question. You say canned salmon. Is it still raw or is cooked like canned tuna?

I do almost the same thing with tuna from the can and it's delicious. But I do remember Mama making this though out my childhood with salmon from the can. Think it was called Blacktop or Pinktop salmon.

Nice looking croquettes & sides, OUP!
When I was a kid, I used to have tuna croquettes. They can also work with melted cheese on them.
