Crawfish Bisque
The stuffing
1 pound crawfish tails
1 cup Yellow Onions minced
1/4 cup Celery minced including leaves
2 cloves garlic
3 eggs
1-1/2 cups seasoned breadcrumbs
Creole seasoning to taste
About 40 to 50 cleaned crawfish heads
The Bisque
6 cups crawfish stock (may need a little more)
1 pound left over crawfish tails
1 cup oil
1 cup a.p. flour
1 cup Onions chopped
1/3 cup Celery chopped
1/4 cup bell pepper chopped
1 bunch green onions sliced
2 cloves garlic chopped
1/2 cup Tomato Sauce
Chopped parsley for garnish
Creole seasoning to taste
Kosher salt to taste
Black pepper to taste
Favorite hot sauce to taste.
Combine all ingredients for stuffing, stuff heads, and bake about 20 minutes at 400 then set aside.
Use the oil and flour and make a golden roux, add the vegetables and sauté, then add the crawfish and ladle the warm stock until the correct consistency is reached. Finally, add the heads.
Serve over rice with parsley for garnish. A crusty piece of French bread or bagette on the side is nice. Some sweet tea will make Mawmaw happy. Hot sauce optional.

Our son said “destructions” as well. It’s a sad day when they stop with the “baby talk”.
