There has been several Tex-Mex Plates showing up lately and I imagine that part of the reason is the Stay Home Policy. However, I have always enjoyed taking leftovers and making Tacos, Nachos, Burritos, Quesadillas and even Enchilidas like today's Lunch. Even tho I wasn't a fan of the Chili that I ordered out the other day, I saved the leftovers and with the help of 3 white corn torts and some Pepper Jack Chez, I sat down to some "not too shabby" Chili Enchiladas.

Nothing wrong with that. have you ever tried the " Mixla" tortillas from HEB? They are half corn/ half flour. You get the taste of corn but the durability of the flour.

I have not tried them but I might pick some up for the next time I plan on fixing Quesadillas.

I use flour on my quesadilla but the Mixla work great on enchiladas

I'll have to give them a try. When I make a taco I alway's put a corn tortilla inside a flour tortilla.

Yo Ramalam, I picked up a pkg of Mixlas today. Also doing a Beer Can Bird and will have plenty of Chicken Pickins for some Quesadillas in a day or so. Thanks for the Tip
