Spoon Drop Tater Cakes
It's been a very long time since I've made these mainly because I never fix mashed taters. "DUH" However, after this morning's breakfast, I may start mashing more often. Since it had been so long, I browsed some Recipes and decided to go for frying them spoon drop style, otherwise, you have to put more flour in the mix and I don't like that. These today had leftover mashed taters, a little flour, Salsa, egg, S&P and finely chopped fried sausage. They were spoon dropped in the hot skillet that I used to brown the sausage, turning often and very carefully until crisp on both sides, but soft in the middle. I then put on some homemade Jalapeno Jelly and Sour Cream on top and "dined"

No Gravy - - - THAT is a light smearing of homemade Jalapeno Jelly topped with a light smearing of Sour Cream.

Used up the last of the Mix this morning in a Pancake Style except not stacked.
Awesome as the last 2 mornings but this time with butter and syrup.
