Chicken and sausage sauce piquant "Comfort food"
Yesterday I had a hankering for one of my many comfort foods. Chicken and sausage sauce Piquant with okra and tomatoes.
it is a fairly simple dish but very warming.
Four thighs and a pound of Zummo's old fashioned sausage.
One pound of smothered okra and tomatoes.
Served over rice and I am a happy camper.
Dessert later on was buttered French bread toast, brown cheese and strawberry jam.
Stick a fork in me after that because I was done.

Love that chicken and sausage piquant pot. Looks very tasty.
Finishing it if with toast and brown cheese is nice. That's the dot above the i as we say.

That old #8 as well as few more of my cast iron pieces have been handed down in my family for years. That particular pot was my mothers and possibly my grandfathers. I love cooking in cast iron when I can.
I think I am going to whip up a gumbo this Sunday and while the gumbo will not finish in the cast iron the roux will be made in it. I bought me a middle of the road 16 quart SS steel pot for smaller gumbos I want to try out.

Nothing better than good old cast iron if it's been well taken care of.
Having something that has been in the family for a long time makes it even better.

Looks great Kevin! The only dish I've ever tasted with sauce piquant was alligator with sauce piquant that another team cooked, and won with, in a little charity cooking contest I participated in at the San Francisco Plantation in Louisiana when we lived there (my dish was Texas style beef brisket). I'd sure lke to sample some of what you cooked up here!

Thank you Rorschach. This dish is one of my favorites, I rarely change it to shrimp or other proteins because I do love chicken thighs and sausage lol.

So I Googled Zummo's sausage as I haven't seen that brand. Now it's my turn to say no H-E-B stores in my area carry something!
If I go to the trouble of ordering sausage through the internet for delivery to my house it'll be from Jacob's in Laplace LA. We won some andouille in some charity raffle through our employer shortly after we moved to that area and nothing I've seen in any supermarket with "andouille" on the label compares. Jacob's uses pecan wood exclusively, we could always smell that bouquet when we were in Laplace.

Yes Sir I know Jacob's quite well. Their Andouille sausage is by far superior to any I know.
I do drive to Louisiana to get Rabideaux's sausage. It is some of the best gumbo sausage I have had. I was born and raised in southwest Louisiana and transplanted to Texas when I was young. All of my relatives still live in Louisiana.
