I scored some great collard greens and fresh Hatch Peppers the other day so I grabbed a pkg of Smoked Pork Shanks to go with them.
I always do my Pot Liquor first so I get all of the flavors to their fullest. I oven roasted the Hatch Peppers and put some of them in the Pot along with some Hatch Bacon, Own-Yawns and 4 smoked shanks. Slow boiled about an hour and then added the Greens. While it was cooking I fixed some Hot Water Cornbread (aka Rooster Cogburn Corn Dodgers) and I have officially Pigged Out "bloat" :laughing7: :lol: :D

That's a cool meal. Interesting how you use the smoked pig shanks.

I love pig shanks bot grilled and in our traditional meal: smoked pig shanks in soup of yellow peas.

Thanks, I usually use Smoked Ham Hocks but decided to try these and see what happened - - - GLAD I DID .
When I finished cooking the Greens the Shank Meat was falling off of the bone.
The Wife doesn't like Collards so she just made her two lap over sammies with the Meat and really like them. :tup:

Was just up in the country where Chen Lee’s store in Ridgway is still standing (didn’t get to go there). BUT I did get to see the Courthouse where Maddie chases down Rooster. It’s in Ouray. Most of the best scenes were filmed in Ouray and Ridgway. Good eati in Ouray too.

I spent 5 beautiful years just east of Ridgway in Summit County Colorado and am familiar with ALL of those areas.
Funny story real quick. Back in the early 70's there was a Lady just south of Ridgeway that had a sign out on the Hwy that read
"AIGS FOR SALE" - - - we swung in there one weekend when we were just driving around and I asked her if she sold EGGS.
She Replied "#%#$(& YES I do, can't you read the Sign on the Hwy?" :roll: :laughing7: :dont: :banghead: :D :lol: :laughing7:

I will have to try the shanks I have always used tasso, smoked hocks or smoked rib tips in my greens.

These were from HEB and a Tyson Brand. The meat just fell off of the bones when I cooked them and the taste was awesome.

Fixed more Collards today but without the help of the Pig Shanks and Hatch Peppers. Had to use Jalapeno and Anaheim with Smoked Ham Hock. It still tastes Larapin and the Cornbread Sticks were perfect with it but next Hatch Season Time I think I'll try and repeat the Subject Style.
