Trout with veggies and cream

Trout with veggies and cream
Made a quick and easy fish dish for dinner. I'm not a big fan of fish but this was great. It was a new one for us.
Brush a little EVOO in an oven safe pan. Ada a good bed of fresh spinach. Add 1 thinly sliced red onion and slices of 1 small red pepper. Also add som cherry tomatoes cut in half.
Add pieces of filet of sea trout or salmon on top. Without skin.
Pour 4.5 dl of cream mixed with 3-4 topped teaspoons of pesto over the fish. Add some salt, pepper and a little chili spices. Add 3 thin slices of lime, cut in half.
Set in oven on 180 celsius for about 15 minutes.
Serve with rice.

Fish is done and flakes nicely.
We can't always like everything that's posted here so that's fine.
In a couple of weeks I'll have time to do some smoking again. Look forward to that.

I like certain kinds of fish, salmon, trout, swordfish. And I like it cooked just on-point. That's a gooood-looking plate!

We had raw salmon today. Served with rice , ponzu sauce and an apple salad that is really great.
The apple salad is:
1 peeled and thinly sliced apple. Green or not to sweet apples.
1 thinly sliced spring onion.
1/2 cup finely chopped cilantro
A little olive oil on top.
Tomorrow there will be burnt ends and chicken wings.
