Been eating on the Meat from the Beer Can Chicken of a couple days ago and decided I'd get a little ?creative? with some of the Breast Meat today. I cut 3 long pieces off and then put some Salsa on them and wrapped with Jalapeno Bacon. I could have used to broiler to cook the Bacon but I decided to use the Microwave instead in hopes that it wouldn't overcook the chicken in the process. That worked out very well and when the bacon was done (but not crispy) I put some Monterey Jack Chez on top with a covering of Fischer's Roasted Raspberry Chipotle Sauce. I WILL DEFINITELYI DO THIS AGAIN

Re: Roasted Raspberry and Chipotle Chicken Diablos
thanks, I fixed 2 more for lunch today but I didn't wrap the breast meat, I just laid the soft cooked bacon on top and then melted the chez and spread on the Sauce - - - I'm thinking the flat way is probably the best way.
