I broke down last night and finally accepted that fall was arriving. In our house that means chili, gumbo, dumplings & soups. One of my favorites is chicken tortilla soup and I’m pretty sure I never made up a batch last year. Long story short, it was past due. Topped with a batch of homemade tortilla strips.

Absolutely! I can't wait to see it from your side of the pond!
Olive Oil
1 medium chopped onion, diced
4 garlic cloves - minced
1 medium jalapeno pepper, diced
1 bell pepper, diced
4 boneless/skinless chicken breasts
2 cups of frozen corn
1/2 cup Water
2 teaspoons Cumin
1 teaspoon Chili Powder
1/4 teaspoon Cayenne Peppper
4 (14oz) Cans of Chicken Broth
2 (14oz) Cans Diced Tomatoes
2 (8oz) Cans Tomato Sauce
1. Sauté onion, garlic, jalapeno & bell pepper with olive oil in large pot until soft
2. Add all of the rest of the ingredients to the large pot and bring to a boil
3. After about 25-30 min, remove chicken breasts and shred
4. Return shredded chicken to the pot to simmer and additional 30-45 min
5. Serve topped with tortilla chips!

Thanks. This sounds delicious and seems like a warming soup now when the temperatures are below freezing point in the morning.
