Rudolph on the menu

Autumn is high season for enjoying what the nature offers. Reindeer, moose and deer is abundant at this time of the year.

We often make a reindeer stew which tastes awesome. Very simple.

We use a packet of thin slices of reindeer meat, add some bacon, mushrooms and cream. Then a little brown cheese, crushed junipers and a little lingonberry jelly. Served with rice. Very tasty.ImageImageImageImageImageImageImageImage

The look of it doesn't do it justice. That's typical for some of our traditional dishes. Living where we do we had very sparse access to veggies and garnish in the old days. Especially during the winter. Hence many of the traditional dishes tend to look colorless.

This particular dish is from the Sami people up north.

Why would you you be scared to eat moose?

A roast of moose or steak from moose is delicious.

Many years ago a friend of mine from New Foundland came down to visit and brought some Moose meat and Caribou meat. We grilled some and Batter Fried some and all of it was good. :cheers: :chef:

My youngest Son, Bo, just harvested a Trophy Axis Deer and their meat is supposed to be one of the best tasting Wild Game Meats. He certainly knows how to process and cook all meats so I'm waiting for his report.

That will be one impressive mount.
Had the opportunity to try Elk, Caribou and Moose all in one setting. All very distinctive and tasty. Simple oil with S&P for seasoning.

No they were imported to Hawaii in the 1860’s and Texas in 1932. Were intended to be kept of game ranches but as happens some did escape and now roam wild.

No Sir, they are not - - - the Buck was very Nocturnal and the Owner/Guide had already planned on Bo taking him with a Night type Beam (?infra-rea?) Bo said that he was about 150 yards away and all he had to rest on was a Tree. This ain't his first Rodeo by any means but it is his first Exotic. We were messaging each other on FB about an hour before the Buck came thru and I had already gone to bed. :laughing7: If he was Native to Texas then it's illegal to use a Light to Harvest. :roll: :whiteflag:
