It's about time to make some smoked salmon.
Have to sides of fish that will be covered in a mix of salt and sugar for 5 hours. Then they will be washed and kept cold until Sunday to dry up. On Sunday I will coldsmoke them. Going to try the Smokepins I bought a while ago.

That's a "process" that I have never tried and I don't know why I haven't.
Wild Bill (Bondo Bill) used to send me samples of Salmon and other items that he had done and I really liked all of them.

Done smoking. A couple of days maturing in a cold place and it should be ready to try.

It's below freezing point now.
But it's the best way to cool a beer fast. We do that all the time during the winter.
