Italian Wedding Soup Hj's ñ Appetizers Pasta on a Stick

Hj's Meatballs mini *
1 onion small grated
1/3 c. basil fresh chop or Italian parsley both
¼ to ½ c. sour cream
1½ tsp. garlic granular
1½ Tbsps. Italian seasonings
½ tsps. oregano
6 pepperoni Boars Head slice x thin chop
   fine* my secret
back pepper to taste
½ c.Tostitos Cantina corn chips crushed fine*
1/2 c. romano grated cheese
8 ozs. gr. beef very lean
4 ozs. gr. pork very lean
8 ozs. gr. poultry very lean
4 Tbsps. parmigiano reggiano

Soup~
12 c. chicken broth home made or bought
   low sodium
10 ozs. spinach frozen chopped or endive 
   can use fresh chopped.
approx 6 to 8 ozs. Acini de Pepe or other tiny pasta*
4 Tbsps. parmigiano reggiano best

Meatballs~
Add all meatball ingredients in a large bowl mix well.  Shape meat mixture into tiny meatballs ñ place on a baking sheet or throw into the broth ..for this soup the meatballs should be on the smaller side - can make them any size you want. NO eggs do I ever use in meatballs or meatloaf THEY BLIND well without eggs. I use sour cream for juicy ñ tender meatballs. SOMETIMES I never use Any breadcrumbs or corn chips.  That filler just makes the meat go further. Being the fact I don't measure seasonings  tried to estimate  the amounts. Just the way it's been all these yrs.

Soup~
Usjng a large pot - bring broth ñ frozen or *escarole or spinach to a boil. Add mini uncooked meatballs - simmer a few minutes - stir often so they don’t stick. Add pasta ñ continue cooking at a low boil 15 minutes  til all cooked. Season with salt ñ pepper - Italian seasonings - fresh garlic chop fine - fresh or dried basil to UR taste. Sprinkle with parmigiano reggiano before serving ñ more on the table.

Note~ * using the Tostitos corn chips in place of breadcrumbs ñ great way to save ñ use those small crushed corn chips up.  (I PLACE all used broken pieces of the thin Tostitos Cantina corn in a freezer bag ñ have lots saved when needed for any dishes).  Cuts down on adding salt to food also.
BOARS HEAD DELI Pepperoni (can use the tube sliced also ñ dice very fine in my meatballs - marina or pasta sauce has been one of my secret ingredients that I've used forever. BOARS HEAD is the best pepperkni - as is using parmigiano reggiano grated cheese.
U all - are the 1st I've ever shared this with.

Pasta - substitute pasta ~such as ditalini - small shells or orzo. CAN use more pasta or make more broth. UR choice

THIS soup is good as any appetizer for any main meal - snack ñ etc.

These are meatballs ñ pasta on a stick are  Yummy as appetizers or snacks.
Love making al dente homemade 100% pasta noodles  ñ sauce - cooked ñ twirled with a meatball ñ pasta - onto with a  toothpick for appetizers. Make extra sauce in case anyone wants more sauce.
Can use large brought cooked pasta spirals  or bowtie pasta - like a kabob with fresh basil leaves - tiny meat balls ñ the pre cooked seasoned pasta tubes or bowties tossed in ñ seasoned with garlic graular - grated cheese - little melted butter - salt ñ pepper to UR taste before placing on the stick with meatballs ñ sauce. YUMMY

BINGO Rambo! u read my mind.. UR absolutely correct. IT'S the time of year for family ñ friends dropping in or we go visit to take for all to enjoy..
