Spares & 3 pairs
Caught some spares on sale a couple weeks ago. Also found a package of lamb “liver”. Well I knew that ain’t no liver for sure. To the point spares are thawing in the fridge and the pairs are soaking in some whole milk till morning. Some pics of the prep work.
Usual cooking method is to bread and fry. Found a YouTube about smoking them…..so smoking it will be!

Lamb testicles. I’ve eaten them before but never prepared them. So took a $6 gamble to give it a try.

I've eaten "Calf Fries" back when I used to Cowboy some and they were made from the Corral to the Campfire. The ones that I've eaten, I've liked but I've never done any myself.

I’ve had them several times but always sliced, breaded and fried. Was planning to do them fried until I watched a YouTube video where they mentioned smoking them. Figured I’d give that method a go. Firing them off around noon.

The pairs are done. Simple rub of SPG, onion powder, jalapeño powder on 3 and Ancho powder on the others. Turn out very well over all. Spares wrapped and doing their thing.

Thank you gentlemen. The oysters aren’t for everyone. I’m one of those people who will try most anything once. I figure if no one else tries it, that just leaves more for me.

Ribs look good, haven't had any in awhile myself.
I grew up next to a livestock auction sale barn. They would have an annual calf nut fry every year. "Rocky Mountain Oysters" they called them. Good times.
