It's been a while, hope all is good. I thought about you while I was cooking supper yesterday and thought you might like this. Blackened catfish on a bed of white rice and covered up with shrimp etouffee. I saw a jar of etouffee base at H.E.B. and thought I'd give it a try and it was pretty darn good, it all really hit the spot.
