Mid-Day Lunch Juggle

Mid-Day Lunch Juggle
Today's Lunch was a three ring circus with
1. Making some Cajun Trinity in preparation for a Gumbo Cook tomorrow.
2. Fixin Sherry's favorite which is Taters and Own-Yawns (Cajun Style today)
3. Some Chicken Diablos from Hebert's Specialty Meats (defrost and pop in the oven for 35 minutes)
Added some Suckle Busters Goodies to them and it really made for some good snacking.
Hand chopped Cajun Trinity Veggies
Sweet Own-Yawn, Banana Peppers, Celery
Enough for 3 nice bags
Sherry's Favorite gets special attention
Chicken Diablos ready for the Oven
Pulled of of the skewer sticks and ready to dip into S B's Chipotle Sauce
Yum Yum

Hey Parts, what temp you cook those Diablo’s at in the oven. There is a meat locker in Tomball I buy them pre made. Never done them in the oven

The Package directions were:
Preheat Oven to 375
Cook in Oven for 20 min
Rotate and flip and then back in the Oven for another 15 minutes
Dipping them in a Sauce really helps, in case they were a little dry.

I am just now seeing this. Now we're talkin! I usually just peel taters and fry them up with onions, similar to OUP's - but as mentioned
before - I am all about the shortcuts! LOL We don't have Krogers here, but I have seen the OBrien potatoes in other brands.

This one will probably get me kicked out of the club ... but I really like the Bob Evans mashed potatoes in the refrigerated section.
Some years ago, I bought a Kitchen Aid Professional mixer, and later a potato ricer - all in the name of making THE BEST mashed taters
for our Holiday meals. Then we (actually Mom) discovered Bob Evans. We both agree we can't do better than that, so we just get the
big tubs, doctor them up with butter and S&P and call it done! I do put forth more effort on the entrée and desserts, but the older I get,
the less I like spending time on the mundane things.

Not a Problem here but we rarelyl buy frozen Veggies unless Sherry's getting a "Dinner" that includes them.
IMHO there's sumptin bout a fresh Tater or any Veggie that get lost in the Freezer. I've even started Par-boiling them "before" I add them to the Chopped Sauteed Own-Yawns and Bacon

I'm sure you're right about the freshness factor, but I guess it doesn't bother me that much. (But I never pass up the opportunity
for fresh corn on the cob, in season.)
Off topic here, but speaking of convenience foods... Hey RAMBO, I was in Walmart last night and they had canned biscuits!
Both the Pillsbury and the store brand. So maybe they are in or on the way to your inlaws' local Walmart. fingers crossed

Don't tell a soul but we like the Bob Evans, too.
When we mash taters, we don't worry about lumps. Always add butter, some cheese, sour cream and green onion. Sometimes more. I guess you'd call them Loaded.
