Poke Salad Annie Gumbo

Actually it's Alligator and Shrimp Gumbo with a light Roux this time.
It's about half way thru the final Simmer and will be accompied by some Rice at eating time.
That fresh Cajun Trinity is "doin it's thang" today :tup:

Yum Yum - - - had two bowls over some Rice and the rest is in zippies in the Freezer. :tup:
One of the best things about Gator Tail Meat is that, even tho it seems like it will be tough at first during the slicing and initial cooking, once it's done some Simmer Time with the other Gumbo Goodies it melts in your mouth. :tup: :chef: :cheers:

Nice cook. I know I'm from a different spot on the globe when I see alligator in the menu. Never tasted it.
