Missed on the pork loin

Just another lesson. I had bought a market trimmed 1/2 pork loin a few weeks ago. We were working outside and I threw it in a deep cast iron skillet with a lid. I told sherry to try to remember to remind me. Put it in at 3 at 250; wanted 135 internal. At 5 o’clock I remembered, TOO LATE, I T was already at 150. We tried to eat it but it’s too dry

You can chop it and sauce it for sammies.

Could you possibly turn it into kind of a Jerky, sliced thin and completely smoke dried?
