Made up a batch of black-eyed peas today. Soaked 1lb of them overnight last night and put in the crockpot on low this morning. Salt/Pepper to taste. I had smoked some spare ribs over Labor Day weekend and trimmed them down to a St Louis cut. I smoked the trimmings too and picked the meat, vacuum sealed and threw in the freezer. Today, half of those trimmings went in with my peas. When there was just a few hours left, I added some whole okra. My personal bowl got a dash of Sucklebusters Chipotle Gunpowder. A meal in a bowl and it was mighTfine.

If you'd take that East across the Sabine and added some Roux, it would become Gumbo, eh Pod ?

Cornbread?
Cornbread would have definitely set it over the top. My problem is that I am trying to reduce my waistline and cornbread wasn't on the Dr's orders. I sure did have some imaginary cornbread with it in my head though.

If it's the fried variety you're speaking of, we call them Hot Water Cornbread
but John Wayne called them "Corn Dodgers" in the Movie "TRUE GRIT"
