Brisket Stuffed Poblanos

What to do with cooked brisket out of the freezer? Well, tonight it was stuffed poblanos. Blistered, skinned and cleaned the peppers. Chopped the smoked brisket, added a can of black beans and a package of wild rice. Blended in a skillet, then stuffed the peppers. I forgot to get a pic, but we topped them with queso fresco. Turned out pretty good. :D
