Had these recently at a restaurant in Dallas, decided to give them a go. Smoked, braised pig tails. Getting 2 hours in the dry sauna and braised another 2.

Should be good - - - did you find these in a regular grocery store or a specialty market??

Mexican Mercado, El Rio Grande. Relatively new chain in the area. Full butcher shop with all sorts of offel. Pretty much the only grocery I shop anymore. Produce is also some of the best around.

Braising done and for myself it was a success. Sampled the small piece, rendered, tender and just the right smoke. Will post when plated. Then get the “boss’s” verdict.

Not the prettiest thing plated. Got dark in the chipotle braise. Couple tails, rice and black beans. Salad got destroyed before the pic. Again they were rendered, tender, smokey and yes very rich.
Boss was a hard pass! Too fatty for her taste.
