finally got back in Texas yesterday, from the kids house for Christmas in Alabama. For us, new years will be black-eyed peas and cornbread, we do trop a little oil in the cast iron skillet and heat it to a good and hot temperature then drop the cornbread so a little frying action takes place then into the oven till done :D our cornbread is a 50 50 mix of cornmeal and flour with a touch of bakin powder, salt, egg and milk mixed to form a thick batter, the peas normally get a ham hock or Christmas ham bone tossed in them, but this year will probably just be peas and no meat... :whiteflag:

we may venture to the heb soon depending on the pea stock, they just aren't the same without a ham hock or hambone cooked in...
but I just received a supply of better than bullion stock, I learned since heb wont stock the complete line of their products, they have some fabulous flavor variations, and they like shipping to customers direct, so we now have ham, sofrito, and Italian herb they are some great flavors...
