I cooked up one of my favorite meals for the New Year. I cannot eat like this often anymore lol.
The roast seasoned up with Tony's and Best Stop.
Then I browned it up really good.
After the browning comes the Trinity.
Then added a quart of chicken stock with two bay leaves and let her cook down.
Cooked up a skillet of scratch jalapeno cheese cornbread.
Plated up with black eyed peas, cabbage and of course my rice and gravy.
Happy New Years to one and all!!!

Oh man, Dutch Oven cooking is hard to beat. Nobody could ever convince me to part with my Cast Set from Cabelas. That looks delicious, that's perfect for warming up the inside of the belly on a cold day !
