Goulash

Postby tex_toby » Wed Feb 08, 2023 9:21 am

It was a chilly and rainy evening outside, so last night seemed like a good time for an indoor cook. It had been a long time, but I made up a batch of goulash. Very easy recipe and super-hearty.

1 tbsp olive oil
1/2 onion
1 green bell pepper
2 lb ground beef
3 tsp minced garlic
2 15oz cans tomato sauce
2 15oz cans petite diced tomatoes
2 14.5oz cans beef broth
3 tbsp worchestershire sauce
2 tsp seasoned salt
2 tbsp Italian seasoning
3 bay leaves
2 cups uncooked macaroni noodles
1 cup cheddar cheese

1. Add olive oil to large pot over medium-high heat. Add in the onion, bell pepper and ground beef and brown. Drain excess fat and return to pot. Add in garlic and stir until fragrant (30-45 seconds).

2. Pour in tomato sauce, diced tomatoes, beef broth, Worcestershire sauce, seasoned salt, Italian seasoning, bay leaves and dried macaroni noodles. Stir and bring to a boil. Reduce heat to light boil and stir occasionally until pasta is tender (about 20 min).

3. Remove bay leaves and stir in cheese just before serving or else add to your personal bowl.

Just an FYI, Red Gold makes their version of diced tomatoes and green chiles AKA "Rotel" that comes in 14oz cans for folks, like me, who like a bit extra "Rotel". I've stopped buying real Rotel except for the Cilantro and Lime version that I can't find in the Red Gold brand.

^^^^^ True story. I like a little melted velveeta on a burger once in awhile. The warden, my wife, says it’s an Exxon byproduct.
