I will surely be banished…
…for this version of white chili.
Seeing as it contains not only carrots, but those white things. It's raw now. Taste test comes later. Much later.
Haven't been cooking anything noteworthy these days, except a failed attempt at Monkey Bread.

Thanks! Well, the house smells good anyway…those are cannellini beans. Big, like red kidneys.

Oh okay those are great too.
So what is the base for the white chili?
I know all about red chili but this is a first for me. Do you use masa as a thickener?

I don’t have a problem with those white things, but can’t say I’ve ever put carrots in chili.
But I don’t make white chili very often.
Looks good though.

The only reason for the carrots: added bulk, and it was there. Did not have enough meat! Next time, no carrots, and two packs of the ground turkey.
The basis of white chili is poultry, light or dark, in any form, green chilies, onyawn, seasonings like cumin (and those optional beans). And it was gooood. Thanks.
Oh and PS, we don't have masa....some of you may want to look away now... I used dry pancake mix. No added taste, but great thickening power.

Interesting on the pancake mix; I’ll try that

Interesting! I would not have thought about that.

Re: I will surely be banished…
You mix a couple tablespoons dry pancake mix with a little water until it's liquid. I guess you do that with masa, too.
This time, when the batter was liquified, I also added a couple spoonfuls of the hot chili liquid and then stirred it in. No lumps!

Masa is just a corn flour. Used the same way you would with the pancake mix or corn starch. Debbie saw your pic and asked what is that? I said white chili she is from Wisconsin and was like Hmmmm..... I am looking this up!!!
