Ok, so I have done backyard BBQ a lot. But I'm new to the whole competition cooking. I see yall talking about the 3-2-1, or 2-1-1 rule. What exactly is this referring to?

3 hours uncovered in smoker , 2 hours wrapped and then another hour unwrapped
