Knife Preferance
I am getting my new pit seasoned up and have been doing some cooking at home. My knife work has been good enough for the house, but I know I will have to step it up for competitions. What is everyone preference on a "set" of knifes that are sturdy, hold and edge, that will allow me to have all of by basis covered as far as cutting and slicing is concerned.

I have 3 cheap boning knives from Amazon, a Victorinox brisket knife, and Cuisinart electric knife, and a pair of chicken shears for my comps.
How bout some more beans Mr.Taggert? I'd say you've had enough!

Limey, what brand of chicken shears do you use. I broke a pair last weekend.

Only thing I know is my wife picked them up at Bed Bath and Beyond. I will check on the brand when I open up my comp. box tomorrow.

For competition meat trimming at home I use a 9" chefs knife, a 9" Rapala filet knife, a 3.5" paring knife and a pair of game shears i got at Academy.
For the day of I have a 12" Dexter serrated meat slicer, a 14" wusthof brisket slicer, a mister twister piranha electric salt water knife and a 6" Rapala filet knife.

There’s no magic knife brother, but make sure you invest in a decent sharpener. That’s a key!

For years I hand sharpened all my knives with my oil stones and enjoyed the time. As I have gotten older my hands cramp and it is no longer fun more like work lol.
I moved to the Ken Onion Work sharp and love it.
