One more question, k.a.m. Does trimming one down to that level drastically change the cook time other than "by weight" guestimates?

Most definitely. That brisket went on at 5:30 A.M. and was resting in the cambro at noon running the drum at 275° 300°.
At 165° it was panned and added 1 cup of beef broth then foil covered. At 205° it was probe tender and went to rest.
Always remember slow and steady wins the race.

“Look, when you first get to the show, these big league hitters are going to light you up like a pinball machine. Don’t worry about it. You stay cocky and arrogant, even when you’re getting beat. That’s the secret. You got a play this game with fear and arrogance.”

GO GET ‘EM, SQUAREPANTS! Yoda and I and our little trailer cooker took on 39 other big corporate teams with ringers and professional cooks back in ‘17, and we mowed them down like weeds. It can be done. Rock and fire, give ‘em the heater.

Bobby: "No."
Hank: "Well, there's really no wrong way to do it."
