New Oklahoma Joe Hondo Smoker

Well I discovered this forum yesterday and have been reading it constantly. Last weekend I bought a brand new Oklahoma Joe Hondo smoker. First meet was some burgers so I could test the temperature. I’ve cooked two racks of St. Louis baby back ribs. And now this morning I’ve got two brisket on the smoker right now. Wanted to say thanks to all the helpful hints that have been posted on here. Until the gasket kit comes in tomorrow, I’ve taken some folks advice and wrapped in aluminum foil around the doors to keep in the smoke. I also found an old steel bowl that I’m using as a source of heated water inside the smoker. Right now she’s keeping her temperature at 266. Thanks again

Well so far I’ve learned that even with buying bags of small Mesquite and Oak wood that they’re still too large for this smoker. I’m gonna have to cut them back and make them smaller to prevent the smoker from getting too hot

Well 4 1/2 hours into smoking and almost ready to wrap them for the finish!!!

Looks like a smaller Highland. I love the OK Joe's! They aren't what they USED to be but even the C.O.S. versions were pretty formidable.
