I went to the dark side

I used to have a nice medium size stick burner in the back yard, my faithful Webber and a gas grill for emergency fast cooks. We had a friend with a egg and loved what they could cook on the crazy little thing. We never got one because of that darn heavy lid. Along comes Kamado Joe with their air lift lid. Wow now we had to have one. We started saving and I was researching and find they do roadshows. One comes to Plano bingo I get the demo deal and now have a big Joe and a JR on my patio. These thing amaze me as to how efficient they are and the quality of food I can get out of them with minimal effort. I'll be posting photos.

Wait til u do your first prime rib, Beer but chicken, fresh baked bread loaves and the BEST pizza you will ever have in ur life on it...

First brisket I was up all night with it. I kept going out and checking the temp. It was so nice not to have to keep tossing in wood every couple house and battle fluctuations in temps. I finally dozed off about 4 am and woke up at 7 and it was still just cooking like I left it.

Welcome to the eggside of cooking. You can grill, smoke, bake, stew, just about anything you can do on a stove and oven in a kitchen can be done on an egg. When you bake, just choose a neutral lump. Once you cook a pizza on the egg you will never call delivery again.

Toys, you know, there is an EggFest down in Salado every year that the grand poobah of the Egg Cult (our own Egghead) goes to every year that is supposed to be just a blast. I think they may even wear kilts there. You should get him to edify. Wonder if your Joe would qualify.
