Joining the dark side!
Not sure how but, I started to think the wife is having an affair. She asks me the other day, "Honey, would you like a new grill?". My initial thought was this HAD to be a trick question and I was very reluctant and hesitant to answer.. Then she showed me a few pictures and it was a PitBoss Austin XL. She explained then that she had heard me mention before I had been considering a pellet grill and found a good deal on it so, she ordered one. Awwww! Contrary to popular belief, I guess she does listen!! Should be here in about a week. To be continued!!

That's a wife you need to take very well care of. Sounds unique to me.

Haha! I thought it strange too but, I did just recently build the front deck.. Well.. I RE-built it.. Ok.. I swapped out ugly, rotting, crooked boards for new crooked boards and at least now nobody can fall through it. Lol!

Thanks! Yes sir, she is actually spoiled rotten. I know, as a man, we all like to think we have just ruined our significant others for anyone else but, I can gather a minimum of 20 references right now that could vouch for that statement. Lol!

She happen to have a sister? Just kidding,lol. My wife surprises me too at times. She hates seafood, can't stand the smell, yet a month or so ago, she left a package of the bench unopened. Curiosity got me, she bought me some prawns frozen, for me. I said you hate them, but she said I know you love them. Everyone's happy,lol.

Thanks all! I've certainly put it through its paces with some chicken at first, then turkey. Did some leg quarters and split breasts the other day and had it on 350 for some crisp skin action. It held temp VERY well, +/- just a couple degrees. Came out superb. The turkey half i did using the P setting. Held a temp of 250 extremely well, and actually less variation. THAT impressed me. Today I'm doing some pork spares on the P setting with a water pan added. So far, she is keeping about 215 degrees so, a 35 degree variation with the water pan. It hasn't really come to temp just yet so, I figure after an hour or 2 it should settle and be rolling along nicely between 230-250.

glad you are enjoying it; you will find that quality pellets will give you good stable temperatures, over the years I have had both good and bad pellet experiences.

My first bag is the pit boss competition blend; hickory, apple, maple.. I'm not really as enthusiastic about the taste as I am the temp consistency. What I am thinking about doing is trying to make my own pellets by a method similar to core sampling. More to come on that later.
