Thanks for the advice guys. I will stay away from the doors, less work and better performance. Can't beat that.
Picked up my drum today and plan on burning it out tomorrow, as long as the wind dies down.

I am doing a dry run on Saturday and my first cook (ribs) Sunday. I am thinking that I need a heat deflector. What are the most common or what has work good for you as a deflector for these uds?

Is that you Derek? You don't need a heat deflector keep your temps right 225-240 and you'll be fine, I don't foil mine either I leave them on for around 4 hours and they come out PERFECT...last time I glazed them with the new Spicy Peach bbq sauce and they were amazing.
Custom vertical offset.

Thanks for the reply Chuck. I was just thinking with the 30gal the meat being closer to the fire box it would be helpful for one. But I see where as long its 250 for example...It's 250. No matter the distance...

Didn't know you were on a smaller pit, disregard what I said cause I have no clue on a 30 gallon.

I ment to put that I was using a 30 gal in my orginal post. Just realized I didn't.

Well i finally found some food grade drums and think i might give it a go. Are the cooking grates most of ya are using from a weber?

I buy my grates from Academy. They are a no name brand and about $5 each.

Well, since there aren't any Academy Sports down this way. Your best bet is Wal-Mart. They sell cheap replacement cooking grates. But, I have found that the Weber grates are heavier and don't bend & sag, they also clean up better and don't start to rust from the plating flaking off after cooking and cleaning them a couple times. I get the Weber grates at Home Depot, HD also sells the Weber replacement charcoal grates too. Which are good for making the charcoal basket in a UDS.

Last week take the wife to see the Doc , foot hurts.
Doc sends her to X-Ray and says " You have FX your foot . Says one week off the foot . She laughs and said that will never happen so what is plan "B" ?
Puts her on meds and says stay off it .
So take her home put the foot up and play nurse for the first day .
Second day I get board and have her up in bed with tv,book, cell phone , land line , big drink and through with breakfast I gave her in bed .
Got bored and had this "project " in mind so I came up with Baby Blue !
This should be a chicken cooking son of a gun !
It is a 15 gallon new drum that has a "Weber Smoky Joe " dome lid .
See what happens when I get bored !
I have another 15 gallon and a 55 gallon all are new and unused or lined .
So I probably have another project or two in the waiting .
