3-2-1'n some Saint Louie's
Been a while since I used the Pellet Pooper or fixed any Ribs so that is not true any longer. The sides were Borracho Beans, Oven Roasted Okra and OUP's Copy of "Rudy's Cream Style Corn" they almost out shined the Ribs on todays plate.
So yesterday evening it began:
Rubbed the rack down with Honey Mustard and Suckle Busters Honey BBQ Rub, wrapped in plastic wrap and let them spend the night in the Frig.
On the PIt Boss at either side of 200 for 3 hrs
Wrapped in Foil and added some Apple Juice for the next 2 hrs at either side of 250
Chopped and Sauteed some Jalapeno Bacon and Sweet Own-Yawns to add to the Borracho Beans
Oiled and SPG'd some Okra for the Oven later.
Tried out my new OUP Style "Rudy's Cream Corn" and according to the Wiffy IT WORKED
Unwrapped and added Suckle Busters Chipotle Sauce for the final 1 hr Glazing
Time to Plate and Eat

Grub looks great, but more importantly I think the reasoning of keeping skills current on a specific piece of equipment plus a specific cut of meat as justification for a cook session pure genius!

Thanks - - - I decided to practice the consuming skills today but hunger over-rides genius.
