Looking to do one this Saturday. I'm either using a tip roast or a bottom round roast. Montreal steak seasoning, inject it and smoke. Am I overthinking this one or need to go in a different direction?
Any Thoughts my brothers?

I think tip roast is better in order to have perfect cook chicken.

Compasspupil, look forward to some degree of chewing cause those are some tough cuts of meat. Maybe you could slice very very thin when serving to make it SEEM more tender.

I fortunately own a commercial slicer so yes it is wickedly thin sliced.

ROAST
1 beef boneless sirloin tip roast
1 to 2 Tbsps. olive or vegetable oil
1) 0.7 oz. Dry Italian dressing mix
POKE HOLES IN roast n add all the above n do what U do
Or on A Tri Tip roast I make a few slits in it all over n season just with light sodium soy sauce 1st ñ add garlic granular ñ pepper Do what U do fat side up.
ITALIAN roast can be marinated first in tomato sauce with Italian seasonings - basil - salt pepper - garlic ñ pepperoncini slices
